This Burrito Bowl recipe is a great menu staple with the year-round access to fresh corn, mozzarella, and salsa. This delicious comfort food uses cilantro rice as the base, but feel free to layer additional base vegetables like shredded lettuce, black beans, or tofu! Cilantro Lime Rice:
1 cup cooked white or brown rice
1 1/2 cup water
1/4 tsp salt
2 tbsp lime juice
1 lime zest
1/4 cup chopped fresh cilantro
- Ingredients for Assembly:
- Pico de Gallo, Tomatilla Salsa, Homemade Salsa, or Corn Salsa of your choice
- 1 cup of Tomatoes, diced
- 2 ears of Corn, shucked, kernals removed
- 3 ounces of Mozzarella, shredded
- 1 cup black beans
- 2 tablespoons of Red Onion, diced
- 1/8 tablespoon of Paprika, smoked
- Kosher Salt & Black Pepper to taste
Instructions
To make the cilantro lime rice, add salt and rice to a pot of boiling water. Return to a boil, then reduce the heat, cover, and simmer until water is absorbed and rice is tender. Takes around 15-18 minutes. Uncover, fluff with fork, then add lime zest, cilantro, and additional sal tto taste.
Assemble Burrito Bowl by arranging rice and lettuce in the bottom of Edibowls®, and top with diced tomatoes, corn, mozzarella, black beans, red onions, and salsa of choice.
