This Elote Roasted Lime Corn Salad recipe is a great seasonal menu item in the summer with fresh lime and cilantro to give it some summer flair. This salad bowl uses Romaine Lettuce as the singular base, but feel free to layer additional base greens like purple cabbage, shredded cabbage, arugala, or spinich! The magic of these bowls are that you can swap as needed.
- 4 cups of Romaine Lettuce, torn.
- 4 ears of Corn, shucked, kernals removed, and grilled.
- 3 tablespoons of Extra Virgin Olive Oil
- 2 tablespoons of Fresh Lime Juice
- 1/8 tablespoon of Paprika, smoked
- 2 tablespoons of Fresh Cilantro, chopped
- 3 ounces of Cotija Cheese, crumbled
- 2 tablespoons of Red Onion, diced
- 4 slices of Radish
- Kosher Salt & Black Pepper to taste
